Step 1
In a large resealable plastic bag, combine the cornmeal, salt, and pepper. Add the potatoes, okra, and onion to the bag, seal it up, and give everything a good shake so the veggies get nicely coated with the cornmeal mixture.

Heat some cooking oil in a big skillet over medium heat until it’s shimmering but not smoking. Carefully add the coated vegetables to the hot oil and let them cook, stirring occasionally, until the potatoes are tender and the okra and onions have a nice golden-brown color—this should take about 10 to 12 minutes.
