Step 1
Turn on your Instant Pot and setting it to the sauté mode. Melt the butter, then add the chopped onion and cook until it’s nice and soft, about 5 minutes. Toss in the garlic and ginger and cook for another 30 seconds until fragrant. Pour in the vinegar to deglaze the pot, scraping up any browned bits from the bottom. Add the beef chunks along with the brown sugar, soy sauce, sesame oil, chile-garlic paste, salt, and pepper.
Step 2
Close the lid, making sure the vent is sealed, and set the pot to cook on high pressure for 45 minutes. It’ll take about 10 to 15 minutes to build up pressure before the timer starts. When the cooking time is up, carefully release the pressure using the quick-release method.
Step 3
Once the pressure is fully released, open the lid and take the beef out. Shred it with two forks, and you’re ready to assemble your tacos!
