Directions
Warm the chicken broth in a small saucepan over medium heat until itโs just about to boil. Meanwhile, put the couscous in a bowl. Once the broth is hot, pour it over the couscous along with 2 tablespoons of olive oil. Give everything a quick stir, then add the tomatoes, red onion, green onions, cucumber, parsley, and a squeeze of lemon juice. Cover the bowl with plastic wrap and let it sit for about 5 minutes so the couscous can steam and absorb all those flavors. After that, remove the plastic wrap and fluff the couscous gently with a fork. Mix everything together well, taste, and season with salt and pepper as you like before serving.
