Step 1
Bring a large pot of salted water to a boil and cook the linguine until itβs just tender but still has a bit of bite, around 11 minutes. While the pasta is cooking, heat some oil in a heavy skillet over medium heat. Take the turkey links out of their casings and add the meat to the pan, breaking it up as it cooks. Keep stirring and cooking until the turkey is nicely browned, which should take about 7 minutes.

Stir in the drained tomatoes and garlic. Turn the heat down and let everything simmer until the tomatoes start to break down, about 10 minutes. Pour in any reserved tomato juice, then add the Parmesan and cream. Toss in the spinach and cook until itβs wilted, about 3 to 5 minutes.
Step 3
Before draining the pasta, save about a quarter cup of the pasta water. Add a splash of this to the sauce if it feels too thick. Season everything with salt and pepper to taste. Finally, serve the sauce spooned over the drained linguine and enjoy!
