Gently heat your oven to 350ยฐF (175ยฐC) and lightly spray a casserole dish with cooking spray. In a skillet over medium-high heat, warm up the olive oil, then add the onion and garlic. Cook them until the onion softens, about 5 minutes. Next, add the ground beef, breaking it up with a wooden spoon as it cooks, until itโs fully brownedโthis should take around 5 to 7 minutes. Sprinkle in the taco seasoning and give everything a good stir.

Transfer the beef mixture to your prepared casserole dish, then mix in the rice, vegetables, kidney beans, a cup of shredded Cheddar cheese, salsa, and olives. Spread the remaining cheese over the top. Pop the dish in the oven and bake for about 30 minutes, or until the cheese is melted and everything is heated through. Let it cool for a few minutes before serving.
