Heat your oven to 400ยฐF (200ยฐC) and lightly spray a 12-cup muffin tin with cooking spray. Put the cereal in a plastic bag and gently crush it with a rolling pin until you have about 1 1/2 cups of crumbs. In a large bowl, combine the crushed cereal, flour, brown sugar, baking powder, and baking soda. In another bowl, mix together the mashed bananas, milk, egg whites, applesauce, raisins, and chocolate chips. Pour the wet ingredients into the dry and stir just until everything is moistenedโdonโt overmix. Spoon the batter evenly into the muffin cups, then pop them in the oven and bake for about 18 to 22 minutes, or until theyโre nice and golden on top. Let the muffins cool in the pan for a couple of minutes before moving them to a wire rack. Theyโre delicious warm, so enjoy!
