Step 1
Whisk the cream cheese, blue cheese, and a tablespoon of buffalo sauce in a microwave-safe bowl. Pop it in the microwave on high for a minute, then give it a good stir. If it’s not smooth yet, microwave it a bit more, stirring every 15 seconds until it’s creamy and well combined. Let this cool for about five minutes before stirring in the cooked chicken and ranch dressing.
Step 2
In a separate bowl, beat the eggs until they’re light and a bit lemony in color. Heat a large skillet over medium-high and spray it lightly with cooking spray. Pour in the eggs and let them cook gently until they’re just starting to set, which should take around three minutes.
Step 3
Spoon the chicken mixture over one half of the eggs, then cook for another minute or two until the top of the omelette is set. Carefully fold it over and slide it onto a plate. Finish by drizzling a little extra buffalo sauce on top for a nice kick.
