Preheat your oven to 250°F (120°C). Grease one large roasting pan or two smaller ones, then spread the popcorn evenly in them. In a medium saucepan, combine the brown sugar, butter, corn syrup, and a few drops of food coloring. Heat the mixture over medium heat, stirring constantly until it comes to a boil. Once boiling, let it cook without stirring for 5 minutes. Take the pan off the heat and quickly stir in the vanilla extract and baking soda—the mixture will foam up a bit, but that’s normal. Pour this syrup over the popcorn and gently stir to coat everything well. Pop the pans in the oven and bake for about 45 minutes, making sure to stir the popcorn every 15 minutes so it coats evenly. When it’s done, give it a good stir as it cools to help break up any clumps.
