Step 1
Warm up the bacon drippings in a saucepan over medium heat. Once hot, add the chopped onion and cook it gently until it’s nice and soft, about 7 minutes. Toss in the garlic and ginger, stirring everything together for another 30 seconds or so. Turn the heat down to low.

In a separate bowl, mix the ketchup, Worcestershire sauce, soy sauce, brown sugar, balsamic vinegar, lemon juice, chipotle sauce, mustard, ground chile pepper, pepper, salt, cumin, coriander, and paprika until well combined. Pour this sauce mixture into the pan with the onions and give it a good stir.
Step 3
Let everything simmer together on low heat for about 20 minutes, stirring often to keep the flavors blending and prevent sticking. Once it’s thickened up and smells amazing, it’s ready to go!
