Melt the butter in a large pot or Dutch oven over medium heat. Next, slowly pour in the cold milk while whisking to keep things smooth. Let it simmer gently, stirring now and then, until it thickens a bitβthis should take around 5 minutes. Stir in the paprika, chipotle, ancho chile powder, cayenne, and a pinch of salt to give it some nice flavor. Turn the heat down to low and add the cheeses a handful at a time, stirring until each addition melts completely. Taste and add more salt if you think it needs it, then youβre ready to dip!
