Directions
Blend the tomatillos, chile peppers, celery, and onion in a food processor until you reach the texture you like. You might need to do this in batches depending on the size of your processor. As you go, pour the mixture into a large pot or bowl. Next, add the lime juice along with the parsley, salt, oregano, pepper, garlic, sage, rosemary, and cumin. Give everything a good stir to combine all those flavors. Cover the salsa and let it sit at room temperature for at least 8 hours or up to overnight to let the flavors really meld. When youβre ready, you can serve it fresh or spoon it into freezer bags to store for later.
