Step 1
Lightly heat your oven to 325Β°F (165Β°C). In a big bowl, combine the oats, pecans, and almonds. In a separate measuring cup, whisk together the oil, maple syrup, and water, then pour it over the oat mixture. Give everything a good stir so the oats and nuts are nicely coated. Spread the mixture evenly onto two baking sheets.

Pop the sheets into the oven and bake for about 12 minutes. Take them out to give everything a good stir, then bake for another 12 minutes. Keep stirring and baking in 12-minute intervals until the granola turns a beautiful golden brownβit usually takes around 36 minutes total. Once itβs done, let it cool completely.
Step 3
While the granola is cooling, mix the cinnamon and cardamom in a container with a lid. Add the dates, raisins, and cranberries, then close the lid and give it a good shake to coat the fruit in the spices. Finally, stir the spiced dried fruit into the cooled granola and enjoy!
