Step 1
Warm your oven to 350ยฐF (175ยฐC). In a bowl, cut the vegetable shortening into the flour using a pastry cutter until the mixture looks like coarse crumbs. In a separate cup, whisk together one egg, cold water, and vinegar. Make a little well in the center of the flour mixture with your fingers and pour in about half of the egg mixture. Stir it in gently, then add the rest of the egg mixture and mix just until everything comes together into a dough.

On a floured surface, roll out the dough into a 10-inch circle. Carefully transfer it to an 8-inch pie dish, trimming the edges and pinching them to create a nice fluted crust.

In a bowl, whisk the maple syrup, two eggs, sweetened condensed milk, and brown sugar until the sugar dissolves. Pour this filling into your prepared crust.

Bake the pie for about 45 minutes, until the filling is set and the top has a few golden, sugary spots. Once itโs out of the oven, let it chill in the fridge for 5 to 6 hours until itโs completely firm and ready to enjoy.
