Directions
Blend the tomato, onion, garlic, ginger, and cashews in a food processor until you get a smooth paste. Heat some oil in a pan over medium heat, then toss in a cinnamon stick, a few cardamom pods, and a bay leaf. Let them sizzle for a couple of minutes so the oil absorbs all those warm flavors. Once fragrant, fish out and discard the whole spices. Next, add your tomato mixture to the pan and let it cook down for a minute or two. Sprinkle in the garam masala, paprika, and a pinch of salt, stirring everything together. Toss in the mushrooms and cook them for about 5 to 7 minutes, stirring now and thenโif it starts to get too thick, splash in a little water to loosen things up. Finally, pour in the coconut milk and let everything heat through for a few more minutes before serving.
