Step 1
Lightly heat your oven to 400ยฐF (200ยฐC). Take the hearts of palm and pat them dry, then toss them with some avocado oil, seafood seasoning, and a bit of salt and pepper. Spread them out on a baking sheet and roast for about 20 minutes until theyโre nicely cooked.
Step 2
While thatโs roasting, mix together the vegan mayo, chopped celery, shallot, lemon zest, juice from a quarter of a lemon, capers, dill, sesame seeds, and a pinch of salt in a large bowl. Once the hearts of palm are done, add them to the bowl and give everything a good toss so itโs all coated.
Step 3
Brush the tops of your sandwich rolls with olive oil. Heat a skillet over medium-high and toast the rolls for about a minute until theyโre golden and a little crispy. Then, pile the hearts of palm mixture onto each roll and enjoy!
