Step 1
Lightly heat your oven to 350Β°F. In a skillet over medium-high heat, sautΓ© the onion and garlic until they smell amazing, about a minute. Then add the chorizo, black beans, tomato sauce, diced tomatoes, jalapeΓ±os, and green chiles. Let everything cook together until itβs bubbling nicely, around 5 to 7 minutes. Stir in the taco seasoning and cilantro, then take the pan off the heat.
Step 2
Spread about a cup of the chorizo mixture evenly across the bottom of a 9x13-inch baking dish. Layer two tortillas over that, then spoon half of the remaining chorizo mixture on top. Sprinkle a good handful of vegan cheddar cheese over everything. Add the rest of the tortillas and top with the rest of the chorizo mixture.
Step 3
Pop the casserole into the oven and bake until itβs hot and bubbly, which should take about 30 minutes. Let it cool a bit before serving, then dig in!
