Step 1
Lightly heat your oven to 350°F (175°C) and lining a 9x13-inch baking dish with aluminum foil for easy cleanup. In a big bowl, combine the ground beef with chopped onion, green bell pepper, and celery. Crack in the eggs and add soy sauce and ketchup. Sprinkle in basil, parsley, oregano, garlic powder, and about 2 teaspoons of pepper. Mix in half a cup of oats, then slowly add the rest a little at a time until the mixture feels firm but not too stiff. Shape it into a loaf and place it in your prepared pan.

Whisk together brown sugar, ketchup, brown mustard, mesquite smoke flavoring, a pinch of pepper, and paprika in a small bowl. Spread this glaze evenly over the top of the meatloaf.

Pop the meatloaf in the oven and bake for about an hour, or until the internal temperature reaches 160°F (72°C). Let it rest a few minutes before slicing and serving.
