Step 1
Pour enough water into a pot to cover the lentils and wheat germ, then bring it to a boil. Once boiling, add the lentils and wheat germ, turn the heat down, and let it simmer gently until the lentils are softβthis usually takes about 20 to 25 minutes. Keep an eye on it and add a little more water if it looks too dry. When the lentils are tender, take the pot off the heat and let it cool for a bit. Then, mash the mixture until itβs thick but still a bit chunky.
Step 2
Transfer the mashed lentils to a mixing bowl. Add the chopped onion, green bell pepper, mozzarella, egg, green chile, minced garlic, and a good pinch of salt and pepper. Mix everything well until itβs all combined, then shape the mixture into eight even patties.
Step 3
Heat about two tablespoons of vegetable oil in a large skillet over medium-high heat. When the oil is hot, cook four patties at a time, flipping them after about three minutes, until theyβre nicely browned on both sides. Repeat with the rest of the patties, adding a little more oil if needed. Serve warm and enjoy!
