Step 1
Lightly heat some olive oil in a large skillet over medium-high heat. Toss in the ground lamb and cook, breaking it up with a spoon, until it starts to crumble. Add the chopped onions and keep cooking until the lamb is nicely browned and the onions have softened, about 5 more minutes. Drain any extra fat, then turn the heat down to medium-low. Stir in the lemon zest, oregano, garlic powder, salt, and pepper so the flavors really come together.

Mix the lemon juice into some water. Pour about a quarter cup of this lemony water into the skillet and let it cook until most of the liquid has evaporated. Keep adding the liquid in small batches, letting it mostly cook off each time, until you’ve used it all—this will take around 30 minutes. The meat should be moist but not swimming in liquid.

While the lamb simmers, blend up the sauce by combining yogurt, feta cheese, lemon juice, oregano, garlic powder, and lemon zest until smooth. Give it a taste and add salt and pepper if it needs a little extra seasoning.
