Helpful Cooking Tips
- Use vegetable or chicken broth instead of water for extra flavor.
- Let the cooked farro rest covered off the heat for a few minutes to absorb all the liquid.
Step 1
Gently heat your oven to 350Β°F (175Β°C). In a heavy skillet with a lid, melt some butter over medium heat. Toss in the onions with a pinch of salt and cook, stirring occasionally, until they soften and become translucentβthis should take about 5 minutes. Next, add the cumin, ancho chili powder, and chipotle chili powder, cooking and stirring for about a minute until fragrant. Stir in the tomato paste and let it cook for another couple of minutes to deepen the flavors.
Step 2
Sprinkle in the oregano and add the drained farro, stirring well so all the grains get coated with the spiced butter mixture. Pour in the chicken broth, crank the heat up to high, and bring everything to a simmer. Once you see it bubbling, give it a good stir, cover the skillet, and take it off the heat.
Step 3
Pop the covered pan into the oven and let it bake for about 50 to 60 minutes, until the farro is tender. When itβs done, fluff the grains gently with a fork before serving.
