Helpful Tips For Cooking
- Use a non-stick pan or lightly oil the skillet to prevent sticking during cooking.
- Press the mixture firmly when shaping the patties to avoid them falling apart while frying.
Step 1
Cook the rice in boiling water. Once itโs boiling, turn the heat down to medium-low, cover the pot, and let it simmer until the rice is soft and all the water has been absorbedโthis usually takes about 20 to 25 minutes. When the rice is done, stir in the corn while itโs still hot.
Step 2
Heat a tablespoon of oil in a skillet over medium heat. Add the black beans, chickpeas, and garlic, and cook them together for 3 to 5 minutes until everything is warmed through and fragrant.
Step 3
In a large bowl, mix the rice and beans together. Then, stir in the Cheddar cheese, a third of a cup of flour, and a pinch of red pepper flakes. The mixture should come together into a thick, moldable dough. Shape this into patties.
Step 4
In a small bowl, combine about a quarter cup of flour with Cajun seasoning and a little more red pepper flakes. Coat each patty lightly in this seasoned flour mixture.
Step 5
Heat another tablespoon of oil in the skillet over medium heat, then fry the patties for about 5 minutes on each side, or until theyโre golden brown and crispy. Serve warm and enjoy!
