Step 1
Warm your oven to 450Β°F (230Β°C). Toss the potato slices with a couple of tablespoons of vegetable oil in a large bowl until theyβre nicely coated. Spread them out in a single layer on a baking sheet, then sprinkle some salt and black pepper on top. Pop them in the oven and bake until they turn golden and crispy, about 20 minutes.

While the potatoes are baking, heat a tablespoon of oil in a skillet over medium heat. Add the ground beef and cook it, breaking it up with a spoon, until itβs browned all over, around 8 to 10 minutes. Drain off any extra grease, then stir in the black beans, taco seasoning, and water. Let everything simmer gently for about 10 minutes so the flavors can come together.
Step 3
Once the potatoes are ready, lay them out on a serving platter and sprinkle half of the cheddar cheese over them. Spoon the beef and bean mixture on top, then scatter the rest of the cheese over everything. Finish by spreading shredded lettuce over the nachos and adding some chopped tomato.
