Heat your oven to 350°F (175°C) and lightly grease four baking sheets so the cookies don’t stick. In a large bowl, cream together the butter and sugar using an electric mixer until the mixture is nice and smooth. Beat in the first egg until it's fully combined, then add the second egg along with the vanilla extract and keep mixing. Gradually add the vegetable oil and honey, followed by the oats, whole wheat flour, ground flax seed, sesame seeds, poppy seeds, flax seeds, baking soda, and cinnamon—mixing well after each addition. Once everything is combined, gently fold in the raisins. Use a 1/4 cup measuring cup to scoop out big, hearty cookie portions and place them on your prepared baking sheets. Pop them in the oven and bake until the edges just start to turn golden brown, which should take about 20 minutes. Let them cool a bit before enjoying!
