Step 1
Lightly heat your oven to 450ยฐF and either grease a baking sheet lightly or line it with foil for easy cleanup. In a large pot, combine water and baking soda, then bring it to a boil. While thatโs heating up, roll your dough out on a floured surface into a rectangle about 10 by 12 inches. Cut it into twelve strips that are about an inch wide. Wrap each strip snugly around a bratwurst in a spiral, pinching the dough edges to seal it and leaving about half an inch of the bratwurst showing at both ends.

Carefully drop three of the wrapped brats into the boiling water at a time and let them cook for about 30 seconds. Remove them with a slotted spoon and place them on your prepared baking sheet. Sprinkle a bit of salt over the top. Repeat this process with the rest of the wrapped brats.

Pop the tray into the oven and bake until the dough turns a lovely golden brown, roughly 12 minutes. Once theyโre out of the oven, slice each bratwurst into thirds and serve with your favorite mustard for dipping.
