Step 1
Mix the sugar and 1/4 cup of water in a small saucepan. Warm it over low heat, stirring gently until the sugar completely dissolves—this should take about 3 to 4 minutes. Once the sugar is melted, take the pan off the heat and let the syrup cool for around 15 minutes.
Step 2
While the syrup is cooling, peel and chop your mangoes. Put them into a blender along with the cooled syrup, lime juice, and 1 cup of water. Blend everything until it’s nice and smooth.
Step 3
Pour the mixture through a fine sieve into a pitcher to catch any bits of pulp. Add the remaining water and toss in some fresh mint leaves. Give it a good stir, then pop it in the fridge to chill for at least a couple of hours before you serve. The longer it sits, the better those flavors come together!
