In a large bowl, mix together the ground turkey, egg, bread crumbs, garlic, onion powder, poultry seasoning, cumin, chili powder, salt, white pepper, and cayenne until everything is well combined. Shape the mixture into four patties and pop them in the fridge for about 30 minutes so the flavors can really meld.
