Step 1
Heat your oven to 350°F (175°C) and lightly grease an 8x8 inch baking pan. Put the raisins and rum in a microwave-safe bowl and heat them on high for about a minute, then set that aside to soak in the flavors.

In a mixing bowl, whisk together the flour, baking powder, baking soda, and salt. In a separate bowl, cream the butter and brown sugar until it’s nice and fluffy. Then, mix in the banana, buttermilk, vanilla, and egg whites until everything is well combined.

Slowly add the dry ingredients to the wet mixture, stirring just until everything comes together. Fold in the rum-soaked raisins along with the walnuts. Pour the batter into your prepared pan and spread it out evenly.

Bake for around 30 minutes, or until the top turns a lovely golden color. Let the bars cool in the pan for about 10 minutes before cutting them into squares. Transfer the pieces to a wire rack to cool completely, and if you like, sprinkle a little powdered sugar on top before serving.
