Directions
Sift the flour, cinnamon, and ginger together in a large bowl. Stir in the sugar until everything is well combined. Next, cut the lard and butter into the flour mixture using a pastry blender or two knives until it looks crumbly. In a small bowl, mix the vinegar and baking soda until it dissolves, then pour that into the flour mixture. Add the molasses and give everything a good stir until it comes together into a dough. Wrap the dough and pop it in the fridge for about 30 minutes to chill. When youβre ready, preheat your oven to 350Β°F (175Β°C). Roll the dough out nice and thin on a floured surface, then cut out your favorite shapes with cookie cutters. Bake the cookies for around 10 minutes, or until theyβre just starting to turn golden around the edges.
