Why This Meal Is A Winner
Tips For Better Flavor
- Toast whole spices before grinding to enhance their aroma.
- Add a splash of lemon juice at the end to brighten the flavors.
Directions
Put the lentils and water into a saucepan and bring it to a boil. Once boiling, lower the heat to medium-low, cover, and let it simmer until the lentils are soft and the water is mostly absorbedβthis usually takes about 20 minutes. While the lentils are cooking, heat some oil in a skillet or tagine over medium-high heat. Toss in the onions and cook them until theyβre nicely browned and translucent, which should take around 5 minutes. Then add the garlic along with the turmeric, coriander, cumin, salt, and pepper. Stir everything together and cook for a few minutes until the spices release their aroma. Next, mix in the cooked lentils, potatoes, crushed tomatoes, sweet potatoes, and carrots. Pour in the vegetable broth, turn the heat down, and let everything simmer gently until the vegetables are tender, about 40 minutes. Enjoy the warm, comforting flavors once itβs ready!
