Step 1
Warm your oven to 400°F (200°C). Get a muffin tin ready by either spraying it with cooking spray or lining it with paper liners.

In a large bowl, whisk together the all-purpose flour, whole wheat flour, cinnamon, ginger, baking soda, nutmeg, allspice, and salt. Make a little well in the center of the dry ingredients.

In another bowl, mix the brown sugar, pumpkin, soy milk, oil, molasses, eggs, and vanilla until everything is well combined. Pour this wet mixture into the well you made in the dry ingredients and gently stir until just mixed. Be careful not to overmix. Then fold in the dark chocolate chips.

Scoop the batter into your prepared muffin cups, filling each one about three-quarters full.

Pop the muffins into the oven and bake for around 15 minutes. You’ll know they’re done when a toothpick inserted into the center comes out clean.

Once baked, take the muffins out of the pan right away and let them cool completely on a wire rack before digging in.
