Step 1
Lightly heat your oven to 325 degrees F. Spread the oats out on a cookie sheet and pop them in the oven for about 5 minutes to toast. Then add the almonds to the oats and toast everything together for another 5 minutes. Once done, take the pan out and transfer the toasted mixture to a bowl.

Stir in the brown sugar and melted butter until everything is well combined. Press this mixture firmly into the bottom and up the sides of a 9-inch pie pan. Pop the crust into the fridge to chill while you make the filling.

In a saucepan, bring the orange juice to a gentle boil. Take it off the heat and slowly whisk in the gelatin until it’s completely dissolved. Then add the ice cream and stir until it melts into a smooth mixture. Gently fold in the peaches and a splash of almond extract.

Pour the filling into the chilled crust and let it set in the fridge for at least 3 hours before serving. Enjoy!
