Step 1
Heat your oven to 375Β°F and lightly spray a baking sheet with cooking spray. Rinse the wings and pat them dry really well with paper towels. Heat vegetable oil in a deep pot or fryer until it reaches 375Β°F. Fry the wings in small batchesβabout 5 or 6 at a timeβuntil theyβre partially cooked, which usually takes around 10 minutes. Drain them on paper towels and let them cool down a bit.
Step 2
Once theyβve cooled, pop the wings back into the hot oil and fry them again until they turn a beautiful golden brown, about 6 to 8 minutes. Drain off the excess oil on fresh paper towels. Toss the wings in a big bowl with your hot wing sauce, making sure each one is nicely coated. Arrange the wings in a single layer on the prepared baking sheet and brush on any leftover sauce.
Step 3
Slide the wings into the oven and bake for about 15 minutes, until the sauce has mostly dried on the surface. Serve them up with some crunchy carrot and celery sticks, plus a bowl of blue cheese dressing for dipping. Enjoy!
