Chef's Cooking Tips
- Press the mixture firmly into the pan for a fudgier texture.
- Chill the brownies well before cutting to help them hold together.
Directions
Soak the dates in a bowl of hot water, making sure they're fully covered. Let them sit for about 10 minutes until they soften up, then drain them well. Meanwhile, line a baking pan with parchment paper to get it ready. In a food processor, combine the almonds, pecans, cocoa powder, and chia seeds, pulsing until everything is nicely chopped and mixed. Add the soaked dates and a pinch of salt, then process again until the mixture becomes smooth and sticky. Press this mixture evenly into the lined pan. For the icing, stir together the coconut oil, cocoa powder, and honey until smooth, then spread it over the top of the brownie base. Pop it in the fridge to set before slicing and enjoying!
