Step 1
Pour the broth into a large pot and adding the carrots, celery, and lentils. Bring everything to a boil over medium-high heat, then let it cook for about 5 minutes. After that, lower the heat and stir in the cabbage, tomato sauce, diced tomatoes, thyme, oregano, salt, pepper, and a bay leaf. Cover the pot and let it simmer gently for around 45 minutes, until the lentils and veggies are nice and tender.

While the soup is simmering, warm up a skillet over medium-high heat. Add the ground beef, chopped onion, and garlic, cooking and stirring until the meat is browned and crumbly and the onions have softened—this usually takes about 5 to 7 minutes. Drain off any excess fat, then stir the cooked beef mixture into the soup. Give everything a good stir, taste, and adjust the seasoning if needed before serving.
