Gently heat your oven to 350Β°F (175Β°C) and line an 8-inch square pan with parchment or wax paper. In a big bowl, combine the oats, cranberries, pecans, ground flax seed, chocolate chips, and wheat germ. In a separate microwave-safe bowl, mix together the brown sugar, honey, vegetable oil, and a pinch of salt. Warm this mixture in the microwave for about 30 seconds, give it a stir, then heat it for another 30 seconds until everything is smooth. Stir in the vanilla extract and cinnamon. Pour the sweet mixture over the oat mixture and mix well until everything is coated and the chocolate starts to melt. Press the granola mixture firmly into the prepared pan. Pop it in the oven and bake for around 30 minutes, or until the edges turn golden brown. When itβs done, use the parchment paper to lift the bars out of the pan and let them cool for about 5 minutes before slicing them up.
