Mix the buttermilk and oats in a big bowl and let them sit for about 5 minutes so the oats can soak up the liquid. In another bowl, whisk together the flours, brown sugar, wheat germ, baking soda, cinnamon, and a pinch of salt.

Beat the eggs with the applesauce and stir them into the oat mixture along with the green food coloring—add a little more if you want a brighter color. Gently fold in the dry ingredients until everything is just combined; don’t overmix.

Heat a griddle or large skillet over medium heat and lightly grease it. Using about a third of a cup, scoop the batter onto the hot surface. Cook until you see bubbles forming on top and the edges start to look dry, which should take around 3 to 4 minutes. Flip the pancakes and cook for another 2 to 3 minutes until they’re golden brown.
