Warm your oven to 350Β°F (175Β°C) and line three baking sheets with parchment paper to keep the cookies from sticking. In a large bowl, cream together the butter and brown sugar with an electric mixer until smooth and fluffy. Then, beat in the eggs until everything is well combined. Add the applesauce and vanilla extract, mixing until smooth.

In another bowl, whisk together the oats, whole wheat flour, baking powder, salt, and cinnamon. Gradually add the dry ingredients to the wet mixture, stirring until just combined. Fold in the raisins, coconut, sunflower seeds, pumpkin seeds, sesame seeds, and ground flax seed for that trail mix goodness.
Step 3
Scoop out the dough by rounded tablespoons onto your prepared baking sheets. To keep things neat, dip a fork in cold water and gently press down on each cookie to flatten them slightly.
