Step 1
In a big bowl, whisk together the flour, oats, brown sugar, baking powder, baking soda, cinnamon, and salt. In another bowl, mix the buttermilk, melted butter, egg, and vanilla until smooth. Pour the wet ingredients into the dry and stir just until everything is combined—don’t overmix. Gently fold in the butterscotch chips and let the batter sit for about 5 minutes.
Step 2
Heat a large nonstick skillet over medium-low and spray it lightly with cooking spray. Scoop about 1/3 cup of batter onto the skillet, then gently spread it out with the back of a spoon to form a pancake a little over 1/4 inch thick. Cook until the edges start to look set and bubbles form on top, about 2 to 3 minutes. Flip carefully and cook for another minute or two, until golden and cooked through. Serve warm and enjoy!
