Step 1
Warm your oven to 350ยฐF (175ยฐC) and greasing an 8x12-inch baking pan. In a bowl, cream together the butter, ยฝ cup of brown sugar, and 1 cup of flour until everything is nicely combined. Press this mixture evenly into the bottom of your prepared pan. Pop it into the oven and bake for about 20 minutes, or until it feels firm but hasnโt started to brown. Once itโs done, take it out and lower the oven temperature to 325ยฐF (165ยฐC).

In a clean bowl, beat together 1 cup of brown sugar, the eggs, 2 tablespoons of flour, vanilla extract, baking powder, and a pinch of salt until the mixture lightens upโthis usually takes around 2 minutes. Stir in the walnuts just until theyโre mixed in, but donโt overdo it. Spread this filling over your baked crust and sprinkle the coconut on top. Bake everything for another 25 minutes or so, until the filling is set. Let it cool just a bit, then cut into squares while still warm. Enjoy!
