Cook the bacon in a medium pot over medium-high heat. Turn it now and then so it browns evenly, which should take about 5 to 7 minutes. If there’s too much grease and it starts to boil, pour some off. Once the bacon is crisp, transfer it to paper towels to drain.

Toss the chopped onion into the pot with the leftover bacon fat and cook it until it’s soft and translucent, about 5 minutes. Add the jalapeño and sauté for another couple of minutes until it just begins to soften.

Bring everything to a gentle boil, then lower the heat to medium. Let it simmer for around 15 minutes, stirring occasionally, so all the flavors come together and the beans get nice and hot.
