Warm your oven to 425°F (220°C) and line a baking sheet with parchment paper. Lay the asparagus out in a single layer on the sheet, then drizzle with olive oil, sprinkle with fresh garlic and cracked peppercorns, and toss everything together to coat evenly. Pop the tray into the oven and roast the asparagus for about 12 to 15 minutes until tender. While that’s roasting, move an oven rack to about 6 inches from the top and turn on the broiler to preheat. When the asparagus is ready, take it out and spread some Gouda cheese along the middle of the spears. Slide it back under the broiler and watch closely as the cheese melts and bubbles, which should take around 3 to 5 minutes. Once it’s nicely melted, pull it out and finish with a sprinkle of pink Himalayan salt before serving.
