Step 1
Cut the chicken into bite-sized pieces, about an inch square. In a bowl, mix together the cornstarch, soy sauce, hoisin sauce, sugar, chopped cilantro, grated ginger, and minced garlic. Toss the chicken in the sauce until it’s well coated, then cover and pop it in the fridge for at least 30 minutes to let the flavors soak in.

When you’re ready, preheat the oven to 400°F. Take each piece of foil and fold it in half twice to make a neat 6-inch square. Spoon the marinated chicken onto the center of each foil square, dividing it evenly. Fold the foil diagonally, then pinch the edges tightly to seal everything inside.
Step 3
Place the foil packets on a baking sheet and bake for about 20 minutes, or until the chicken is cooked through and no longer pink in the middle. Once done, carefully open the packets (watch out for steam!) and enjoy your flavorful, juicy chicken.
