Why This Recipe Is A Must Try
Expert Cooking Tips
- Use parchment paper or a silicone mat on your baking sheet to prevent sticking.
- Keep an eye on the slices towards the end of baking to avoid burning, as honey can caramelize quickly.
Directions
Heat your oven to 425°F (220°C). Line a large baking sheet with foil and give it a light spray with cooking oil. In a small bowl, mix together the panko, brown sugar, and cinnamon. Dip each sweet potato slice into a beaten egg, then press it into the panko mixture so it’s nicely coated. Arrange the slices in a single layer on the baking sheet and give the tops a quick spray with cooking oil. Pop them in the oven and bake until they’re golden and crispy, about 20 minutes. While they’re baking, stir together the butter and honey in a small bowl. Serve the sweet potato slices warm, paired with the honey butter for dipping.
