Why This Dish Is So Satisfying
Cooking Advice
- Toss the potatoes in a bit of oil and seasoning before roasting to get them crispy.
- Check the chickenβs internal temperature to ensure itβs fully cooked and safe to eat.
Step 1
Heat your oven to 325Β°F (165Β°C). In a large baking dish, arrange the chicken breasts along with the potatoes and onion.
Step 2
Combine ketchup, brown sugar, Worcestershire sauce, vinegar, margarine, lemon juice, dry mustard, salt, paprika, chili powder, and red pepper flakes in a saucepan. Heat it up, stirring constantly until the sugar and salt dissolve and the sauce comes to a boil.
Step 3
Pour that flavorful sauce evenly over the chicken and veggies, then cover the dish tightly with aluminum foil. Pop it into the oven and let it bake for about two hours. Youβll know itβs done when the chicken is no longer pink inside, the juices run clear, and the sauce has thickened up nicely. If you have a meat thermometer, the thickest part of the chicken should reach at least 160Β°F (70Β°C).
