Step 1
Lightly heat your oven to 500Β°F (260Β°C). While thatβs warming up, melt some butter in a skillet over medium heat. Keep an eye on it and whisk occasionally so it doesnβt burnβonce it turns a nice light brown and smells nutty, take it off the heat.
Step 2
In a bowl, mix the cauliflower florets with the browned butter and a pinch of salt until everything is nicely coated. Spread the cauliflower out on a baking sheet and pop it in the oven. Roast for about 15 minutes, or until the cauliflower is just tender.
Step 3
Once itβs out of the oven, toss the hot cauliflower with thinly sliced red onion, plenty of Pecorino Romano cheese, and fresh mint. Finish it off with a squeeze of lemon juice and add a little more salt if needed. Serve warm and enjoy!
