Directions
Warm your oven to 400°F (200°C). Line a baking sheet with parchment paper or some nonstick foil to keep things easy. Trim off the stems and core from the fennel bulbs, then save a few of the feathery fronds for later. Chop the fennel into bite-sized pieces and toss them together with the fronds, Parmesan cheese, a drizzle of oil, and a good pinch of salt and pepper. Spread everything out in a single layer on your prepared baking sheet. Pop it in the oven and roast for about 20 minutes. After that, give the fennel a good stir or flip with a spatula, then roast it for another 5 to 10 minutes until it’s nicely browned and tender with a little crisp on the edges.
