Melt the butter in a large pot over medium heat. Once it’s melted, toss in the chopped onion, celery, and carrot, and cook them until they’re soft and fragrant, about 5 minutes. Next, pour in the chicken broth, tomatoes, wine, and a splash of lemon juice, then bring everything to a gentle boil. Carefully add the tilapia along with your herbs, salt, and pepper. Lower the heat, partially cover the pot, and let it simmer until the fish is flaky and cooked through, which should take around 10 minutes. Scoop the fish out onto a plate and cover it to keep warm. Let the broth simmer a bit longer until it thickens slightly, about 10 to 15 minutes. Finally, return the fish to the pot just to warm it up again for a minute or two before serving.
