Step 1
Warm a large pan over medium heat for a couple of minutes. Pour in 2 tablespoons of oil, then add the panko breadcrumbs. Stir them around for 2 to 3 minutes until they start to turn a nice golden color. Toss in the garlic and cook for another minute or two until everything smells amazing and the crumbs are nicely toasted.
Step 2
Transfer the toasted breadcrumbs to a small bowl, then stir in the lemon zest, seafood seasoning, and a pinch of salt. Set this mixture aside for now.
Step 3
Wipe out the pan, then add the remaining oil and heat it over medium. Season your mahi mahi fillets with the rest of the salt, and place them in the pan. Cook each side for about 2 to 3 minutes until the fish looks opaque and flakes easily. If you have a thermometer, it should read 145°F in the thickest part.
Step 4
When the fish is done, spoon the breadcrumb topping over each fillet and serve right away.
