Directions
Bring a large pot of salted water to a boil. Toss in the rotini and cook it for about 8 to 10 minutes until it’s just tender, then drain and set aside. Meanwhile, heat the vegetable broth in a large pan over medium heat until it’s bubbling. Lower the heat and add the spinach, chopped onion, minced garlic, a pinch of cayenne pepper, salt, and pepper. Give everything a good stir, then mix in the black beans and broccoli. Let it all cook together for another 5 to 10 minutes, stirring occasionally. Next, add the tomatoes and keep cooking for about 10 minutes, or until the veggies are nice and tender. Serve this flavorful mix over your pasta and finish it off with a sprinkle of Parmesan cheese.
