Step 1
Bring a big pot of salted water to a boil. Once itβs bubbling, add the rotini and cook it until itβs tender but still has a little biteβabout 8 minutes should do. Drain the pasta and toss it into a large bowl.
Step 2
Add the broccoli, vegan mayo, olives, pickles, tomatoes, a splash of pickle juice, fresh and dried dill, and a bit of mustard. Mix everything together so the flavors come together nicely.
Step 3
Pop the salad in the fridge for at least three hours to let it chill and the flavors meld. Give it a good stir before you serve, and enjoy!
